Fresh Lobster Linguine

A few days ago I invited a new friend over for some white wine and put together this easy to make and mouthwatering delicious meal. Lately I have been on a sea food kick – I was putting together a list of some great dishes that highlighted seafood when I realized that I had never cooked fresh lobster. I set out on my mission create a light and fresh dish that included fresh Maine lobster.

I took a trip to my favorite local market and picked up a medium sized fresh Lobster from the coast of Maine. To be honest I don’t really know how to pick out a “qualifying” contender – I asked and trusted the gentleman that was at the counter.

…this guy was a winner

IMG_0306

After bringing a deep pot of water to a strong boil place your fresh lobster into the pot claws first. Keep the rubber bands on the claws, this will keep the claw meat tender throughout the cooking process. Cook the lobster for 12 mins per pound.

IMG_0307

Remove the cooked lobster from the water and chill on ice. This will stop the lobster from over cooking. No one wants chewy lobster.

IMG_0308

Now comes the time to remove the meat from the shell. I’ll spar the messy photographs. lol

IMG_0309

After you have removed the meat dice into bite sized pieces.

In a sauté pan heat up a little olive oil and add slice Serrano peppers and garlic. The goal is to add flavor to the olive oil.

Toss in fresh linguine into the pan. The pasta is already cooked so we are just adding flavor. Before removing the pasta from the pan toss in the fresh lobster and give it a couple of spins. Don’t leave on the heat for too long or you will end up with soft pasta and chewy lobster

Plate the pasta and fresh Lobster. Top with fresh lemon juice and parsley.

Thats all!

I hope you enjoy this recipe! Let me know if you have any questions, I’m always here to help.

Baked Sriracha & Soy Wings

Alright guys… Y’all know how obsessed I am with hot wings. I’ve decided to share my recipe for these tasty baked sriracha & soy hot wings! These wings are perfect for game day (Super Bowl is just around the corner) with a perfect blend of sweetness and spiciness.

I have been on the hunt for the perfect home-made hot wing recipe for the longest time. Slowly, I have perfected this recipe. I’ve found a way to mimic the crispiness that you get from fried wings.

untitled-3505

I start out with fresh chicken wings from my local meat market. I prefer wings that have never been frozen. However, frozen wings from the grocery store will work. Just make sure that they are fully thawed before you cook them. A good rule of thumb is 1lb per person. (1lb = 10-12 wings).

untitled-0991

Preheat your oven to 425 degrees. This high temperature helps to make the wings crispy.

I totally forgot to take a picture of this next step. However, it is probably one of the most important steps in order to end with a perfectly crispy wing.

Par boil the wings in salted water for 10-12 minutes. This will allow some of the fat to cook down. Fatty chicken wings will not crisp up in the oven like we want.

untitled-1747

After the wings have boiled. Remove from heat and pat dry.

Next, we are going to toss the wings in a very small amount of olive oil. This is really going to help the wing reach the optimum level of crispiness!

untitled-1459

Spread the wings out on a baking sheet lined with parchment paper. The parchment paper will prevent the wings from sticking to the baking sheet. Then season with a little salt and pepper.

Bake the wings for 30-40 mins. The time will depend on your particular oven.

untitled-7245

While the wings are baking I make the sauce.

Combine:

1/3 cup honey

2 tablespoons of soy sauce

2 tablespoons of sriracha sauce

Thats all!

untitled-0494

Once the wings are cooked throughout and have started to crisp remove from oven. Now turn on your broiler.

untitled-4355

Toss the baked wings with the sauce that you just made. Be generous.

untitled-2840

Arrange the sauced wings back on a baking sheet and place under preheated broiler.  Keep an eye on the wings to be sure that they do not burn. The high heat from the broiler will reduce the sugar in the sauce. This will also add the the level of crispiness that we are looking for.

I like to sprinkle toasted sesame seeds over the top to complete the dish.

Finally, enjoy your delicious home-cooked Sriracha & soy hot wings.

Don’t be less than smart!

That’s it folks… 2016 has come and gone. At the moment that the clock stroke midnight  on the last day of 2016, were you be able to say the you owned 2016?  Now, I don’t mean owned in the sense that everything was perfect. However, in the sense that you’re not allowing any moment or life lesson that took place throughout 2016 to own (or hold power over) you. Lets be honest… life is NEVER perfect, or at least I haven’t met someone that led a perfect year without their fair share of bruises. We win some and we lose some, plain and simple. Life is imperfect. Understanding that is one of the first steps to owning 2016.

Here are 12 Little Life Lessons that I learned throughout 2016

1. Learn to say “No’

Trust me. I know how difficult it can be to say no to someone. I’ve always been the person that gave 120%. However, over this past year I’ve really come to the point where I had to stop and reevaluate whether the sacrifice was benefiting me or the person I was going above and beyond for.

2.Trust your gut

I always tell myself and friends, “Don’t be less than smart” . The idea behind the statement comes from my belief that each and every one of us has experienced enough in life to know whats really going on. In every situation there are always more than one option.. it is your duty to yourself to chose the option that aligns the most with your goals and aspirations . Don’t be less than smart in 2017

3. Invest in experiences

2016 has thought me to invest in experiences  and moment. Whether it be with friends or just a solo moment to ground yourself. You don’t even have to spend any of your hard earned cash to do this. Just remember that the memories that you will make will alway retain their value.

4. Classic vs Trends

Being an individual that LOVES fashion. You better believe that I struggle with over shopping lol – However, over the last year I have decided that personally I will invest more hard earned cash into classic pieces that will stay with me throughout many fashion seasons. Yes, its ok to splurge on that really chic but trendy sweater that was in Coach Fall 2016 runway collection… but is it going to prove its value over the next few seasons?

5. Take that calculated  risk

Trust me.. we’ve all been there. That situation where you’re just not sure which path to take. I say, evaluate the risk and reward and then go from there. In life there will be times where were just have to take that leap of faith, knowing that we did your due diligence and know the potential outcome. It’s ok to take a calculated risk in 2017! Just don’t be less than smart! lol

6. Get organized

Ok. I know this will either bring me success or failure in the New Year. While juggling College, work, and my company throughout 2017 a great organizational system is key! There are a lot of great mobile apps that help people stay organized. I prefer the old-school version of a classic day planner where I can manage all the aspects of my life. I found this Planner Pad version that I use and LOVE! It accommodates all of the various aspects of my crazy busy life!

7. Count your blessings

Over the next year I encourage all of you to daily count your blessings. Trust me, I know what it feels like to have your world crashing down around you. However, remember that even though things aren’t going just like we would like them to, there are so many people out in this world that would love to have it as “easy” as you do. Just keep that in mind. I know that I daily have to remind myself how lucky I am to have the family, friend, and life that I live.

8. Family

At the end of the day Family  are the ones that you can can’t on.  Throughout my life and 2016 I’ve realized that family are the ones that stick by your side throughout the good times and bad times. Family doesn’t have to be blood – in the same breath… don’t be fooled, even “family”doesn’t always have your back. Don’t be less than smart in 2017. Give all that you can give of yourself. In one way or another you will find a blessing in return.

9. Experience your emotions

For anyone that knows me, they know that I’m not the type of person that really share any deep emotion. Thats just who I am. I’m definitely a extremely private person. However, I’ve reached the point in 2016 where I can to the conclusion  that we are ALL entitled to our own emotions. We all have the right to feel how ever we want to feel about a situation. Now… don’t get it twisted. Just because you feel a particular way doesn’t make you right. We are all different and we all experience things differently – thats what makes this world so great! Diversity.

10. Try it, even if it’s just once

So many of us are scared to try something new. Trust me I’ve experienced the same emotion. I’ve made the commit to myself to try as many new thing through out 2017 that I can. If I’m going to a restaurant I’m going to try that new dish that I normally wouldn’t try. Take a chance on a date your normally wouldn’t be inclined to go on. Take the longer way to work sometime… who knows what might come of it, right?

11. Learn and grow

One of this most important lessons that I think I can take into 2017 is to be come more open to criticism. Now when I say criticism, I’m taking about constructive criticism. Anytime someone has a critic of something I said or did, I make an effort to reevaluate my actions and decide what parts of the criticism that I need to take ownership of. I alway say to take criticism with a grain of salt… criticism can come from many different places and we need to be able to decipher where its coming from and and how it can help develop us into better people.

12. Learn to love alone time.

How can I offer anything of significance to someone, if I can’t even offer the same to myself…. Throughout 2017 I challenge all of you to learn to love who you are. The good, the bad, and the ugly. Were not perfect, no one is. However, when we take ownership of all that we are NO ONE can ever use it against you. Also, when you truly love who you are you have so much more to give to someone else. Respect your self worth and NEVER underestimate your strength. Learn to fully love all that you are in 2017!

I wish you all an amazing NEW YEAR!!!!

Thank you again for joining me on this journey of living and growing throughout 2017

xo. Michael

Fire in the Hole!

Fire in the Hole!

OMG y’all! I need to share this with you, but only if you’re ready to spice up your life!

So every morning for the last two weeks as soon as I have regained conscienseness from my deep and peaceful slumber I have made myself self a “Fire in the Hole” ginger shot. I’m absolutely in love. I’ve always been a huge fan of ginger and anything with a kick.

Both ginger and cayenne pepper have amazing homeopathic influences on the body, such as:

Anti-inflammatory, Anti-bacterial, Clears congestion, Treats stomach ulcers, Aids in weightless , Promotes heart health , Treats sores , Aids in digestion, Lowers blood pressure, Treats toothaches, Treats colds & fever

untitled-8794

Needed Ingredients include: Lemons, Fresh ginger (you can use dried ginger), cayenne pepper, and water. Thats it!

First, I juiced two large fresh lemons (be sure to remove any seeds)

untitled-8820

After dicing fresh ginger I used a mortar and pestle to grind the ginger to a pulp. Then, after adding the ginger to the lemon juice I stirred in the cayenne pepper and lemon zest. I like heat so I add extra pepper.

untitled-8863

This Fire in the Hole ginger shot is a great way to jumpstart your metabolism every morning. I like to add this shot to my pre-work out routine. Give this recipe a try and let me know if you like it!

Lets get Fit together!

Well y’all… the holiday season is just around the corner and I’m already dreaming of gorging on delicious meats, sweet treats, and all while listening to some Christmas beats. Too much? lol – What I’m not looking forward to is the terrible guilt that will follow. Luckily I picked up an early xmas gift for myself while I was out doing a little gift shopping for friends and family. This @Fitbit Alta that I picked up from @Nordstrom will give me a leg up on my pre-holiday fitness.

Style & Function

The Fitbit Alta features a front facing display where the user can see how many steps that they have taken that day, they can also display the date and time in various formats that are all customizable. One of my favorite feature is the ability to receive text and call notification right on the screen.

untitled-8757

Community and Motivation

I do have to be honest. I never thought that I would like the idea of wearing a wristband that just told me how many steps that I have taken. I totally thought that it was a fad and gimmick. Once I gave it a shot I quickly realized that it is so much more that. The ability to connect with your friends and family really changes the game. Through the Friends feature users are able to set group challenges and fitness plans that really encourages personal health and fitness, and accountability from your friends and peers.

Lets get Fit together

add me as a friend on the Fitbit website and app so we can challenge and motive each other! I’ve already set up a daily goal of 12,000 steps for myself. Whats your daily goal?

The Classic Peacoat

A navy peacoat is a MUST HAVE staple in every mans closet. I love this particular double breasted version from Banana Republic. 100% Italian wool jackets will keep every man warm throughout a Colorado winter. I particular love the broad lapels and length of this coat. I’m a huge fan of the versatility of a classic peacoat – from running around campus to a night out on the town, a classic peacoat is worth every penny.

For this shoot I paired the Peacoat with a beautiful cashmere zip cardigan and a tailored oxford button-down shirt. untitled-8664

Autumn layering

Autumn is out in full force here in Denver. I wanted to share a quick OOTD that is perfect for any autumn adventure!

untitled-8471

This cable knit sweater is a piece that I just added to my wardrobe. I picked it up at the recently open Uniqlo store in downtown Denver for only $30. I layered the sweater with a classic button down oxford from Banana Republic. I picked up these extremely comfortable stretch chinos from Gapm – the deep burgundy color is perfect for fall.

I decided to to finish off the look with my favorite pair of brown boots ( Johnston & Murphy).

Tackle the dry air!

Summer is long gone – the dry air and cold winds have set camp here in Denver. I don’t know about you but I have always struggled with dry skin throughout the autumn and winter months in Colorado. I wanted to share with you some of THE best products that I have found that help me through these unforgiving months.

untitled-8376

I have always really liked the products that the brand L’Occitane have put out to the market.. However, when I was introduced to their Almond Oil collection I was thrilled. I have always loved the smell of any almond scented product, but mix the scent with an amazing formula and I’m sold! The Three products that I wanted to share with you are the Almond Milk Concentrate Body Cream, Hand Cream, and the Shower Oil.

I like to use the body cream right before bed on my hands and arms. The cream has really made a difference in the dryness that I typically experience.

I like to keep a tube of the hand cream with me throughout my day for anytime I feel like may hands are getting a little dry.

I have to be honest. When I was first introduced to the shower oil I was a sceptic. I have fairly sensitive skin just like many of you do – so the word oil in any product makes me think twice. When I first tried the product I was AMAZED. There wasn’t the typical “oily” feeling the I had expected. The shower oil lathered up just like a typical body wash, yet after rinsing it left my skin feeling deeply conditioned. I’m already on my third bottle!

These products have worked for me and I really wanted to share them with you. Let me know if you too have fallen in love with these products or if you’re going to give them a try!

Blistered Brussels Sprouts

Its no secret that I love to cook… so I wanted to share one of my favourite meals to cook for friends and family. Blistered brussels sprouts. Now I know that many of you have only ever tried the bland and boring version of these tasty little treats – but Im making it my mission to change that.

I’m a huge fan of trying new things at restaurants and then recreating them with my own twist.

This is my take on blistered brussels sprouts, pan seared chicken,  and a lemon balsamic vinaigrette.

untitled-8385

I  took a simplistic approach when I seasoned the chicken breast. Salt, Pepper, and Garlic Salt.

untitled-6172

Pan sear the chicken breast on medium to high heat with EVOO (Extra Virgin Olive Oil)

untitled-6175

As the chicken breast cooks I add some diced peppered bacon strips. This helps Flavor the chicken and oil that you’ll later cook the brussels sprouts in. After the chicken and bacon is cooked fully – remove from heat and let cool.

I cut my brussels sprouts in half and then steam them for 10-12 mins. After draining throw them into the same pan that you cooked the chicken and bacon. I like to use the left over bacon grease for extra flavor.

untitled-6186

Dont stir too much. You want to let the brussels sprouts blacken (Blister).

untitled-6188

I chose to pair the blistered brussels sprouts with a lemon balsamic vinaigrette to help cut down on the fat from the bacon.

Lemon Balsamic Vinaigrette:

  • 3 Lemons
  • Honey
  • Balsamic Vinaigrette
  • Olive Oil
  • Salt & Pepper to taste

untitled-8388untitled-6180

untitled-6183untitled-8390

And that it! super simple dish. I like to serve with pan seared chicken to make it a main dish – however, just the brussels sprouts make a great hors d’oeuvre.

Give this dish a try and let me know how you like it!  It’s absolutely one of my favorites.
